Biography of Chris

Chocolatier Blue features gourmet chocolates made with nothing but the finest and freshest ingredients. It is our philosophy that every chocolate should be made using nothing but the best possible ingredients and each ingredient has a unique and amazing background. Here are a few of those amazing stories that explain how exceptional every ingredient is and how it contributes to the pure taste of every chocolate.

First and most importantly, our chocolates start with single-origin chocolate. Chris Blue is the only confectioner in the United States to be allowed to use Amedei chocolate. We use 5-Star organic butter from California. It is completely raw and has the highest butter fat content in the world; therefore, it is considered the best butter in the world! It actually takes 14 gallons of milk to make one pound of butter. There is only a select few chefs in the world that is able to receive this exceptial butter and Chris is lucky to be one of the few.

Our raspberries, peaches, lemons, and many other fruit used in our collections come directly from the local farmer’s markets in Berkeley. All the seasonal fresh fruit contribute to the amazing flavors of each filling.

We went to great lengths to find the best nuts in the world. The best pistachios in the world come from Sicily and they are the most flavorful pistachios in the world. They are the only pistachios we will use for the fillings. We get Ennis hazelnuts from a small farm in Washington and they are the sweetest hazelnuts, perfect for chocolates.

Every chocolate has a pinch of fleur de sel salt from Camaque in order to hit every taste bud on the tongue. Just like a perfect dessert, it is Chris intention to perfectly balance each chocolate with sweet, sour, bitter, and salty.

As you can tell, we use absolutely no artificial flavorings, extracts, compounds, preservatives, or even purees.
